celebrating the ocean’s most coveted catch.

Set within the Dining Room & Terrace, the evening brings together leading culinary talent and exceptional produce for an immersive, high-impact showcase.

Culinary Director Joel Bickford and Head Chef Jarrod Walsh present a five-course menu dedicated entirely to sustainably sourced Bluefin, exploring the fish through pristine raw expressions and refined, composed dishes that honour seasonality and provenance. Seafood authority John Susman and tuna expert Narito Ishii bring rare insight and depth to the night.

A live tuna breakdown and auction forms the dramatic centrepiece, offering guests an up-close look at the precision behind the extraordinary ingredient, with proceeds supporting mental health initiatives.
